As space is a big issue, the TT180 bag compactor is sited in the basement, where it is a key part of the waste management system. All glass and food is separated and recycled; the remainder of the waste, over 20 bags per day, is then compacted into 2-3 neat sealed cubes, enabling the restaurant to store the waste between collections.
